If I’m being honest…cooking is not my love. I really don’t like it very much at all. I’m not creative in that area. I’m super simple, easy gal. I don’t like to spend a lot of time in the kitchen…but I like to eat clean. I like to eat healthy. I like to give my body good foods that are real, that were at some point living.
I believe that’s what our bodies were made for or they were made for our bodies. ;-) One or the other, right?! If you look back in history, grocery stores really haven’t been around that long. If my history mind serves me correctly (not my strongest subject!) …it was somewhere around one of the wars, when many of the men were away and more women were going to work. There was a need for the convenience of a local market.
When they first came out though, they looked more like a farmers market as opposed to today. In time, manufacturers started mass producing products like cereal and canned goods. Somewhere around 1974, there was a law passed that had been in the works for many years. It said food products didn’t need to be labeled as imitation if they weren’t exactly real food products.. This opened the doors wide for tons of other products to infiltrate the market.
That was the year I was born. I remember growing up and cereal being a big breakfast item. The cereal aisle back then was maybe half what it is now a days. Same thing with fruit roll ups. They were the first on the market when I was in elementary school. Those were the main ones and there were only a select few others. Now the fruit roll ups and gummies make up for a huge section.
Not to mention white and wheat bread. Think about it, if you’re close to my age. The bread used to go bad in 2-3 days, tops! It would start molding if you didn’t eat it quickly. Today, it takes 2-3 weeks for most. They’ve added chemical junk and preservatives to keep it fresh longer. …and just a side note, these breads are stripped of all their nutrients, then fortified with vitamins, along with tons of other added junk to make it taste good. But so not good for you!
Ok, enough of that. I’m not one to hang onto details, but I read and researched all this stuff years ago when I started on this journey. Start researching yourself & you’ll see what I’m talking about.
Now, onto those egg muffins! An easy, quick breakfast idea to make ahead. You can refrigerate or freeze them, depending on when you’ll be eating them & just pop them in the microwave when you’re ready.
12 eggs
2 cups spinach
1 medium red bell pepper
1/2 cup onions
1 tsp sea salt
- Chop the spinach, onions and red bell pepper.
- Whisk 12 eggs in a bowl.
- Add the vegetables and mix them together along with the salt.
- Spray muffin tins with non-stick spray. I used an organic olive oil one.
- Pour egg & veggie mixture evenly into the 12 muffin tins.
- Cook at 375 for 15-20 minutes or until a toothpick inserted in the middle comes out clean.
- Enjoy! And/or save for later to enjoy. ;-)
1 serving is 2 cups!
